Garlic Spinach with Pancetta

pancettaMakes 3 servings

  • 1.5 bunches fresh spinach
  • 4 cloves of garlic, minced
  • 1 tablespoon red pepper flakes
  • 2 tablespoons extra virgin olive oil
  • Salt and pepper
  • 1 package pancetta about 3 oz

Sauté the pancetta in a small frying pan until cooked, drain fat and set aside. Mince the garlic, I used a food processor to get it nice and small. Wash and loosely dry the spinach. Next heat a large skillet with 1 tablespoon oil and add the garlic. Add the spinach and red pepper flakes and drizzle the spinach with remaining tablespoon of oil. Add panctetta and sautee spinach until done, this should take just a few minutes.
